Happy Mother’s Day & Teacher Appreciation Week!

This week is a very special time of year because it celebrates both mothers and teachers. In other words, it is a time of celebration for nearly everyone who reads this blog! My own mother, who is both a teacher and a River School blog reader, loves to celebrate special occasions over a quiche brunch with loved ones. In honor of her (and the rest of you wonderful mothers and teachers out there), I am going to share her home-famous (but super easy) quiche recipe… Whether you decide to eat it for breakfast in bed with your little one, or serve it for company with mimosas, it is yours to enjoy. Momma’s Turkey Ham & Cheese Quiche

(Serves 8)

Momma's Turkey Ham & Cheese Quiche - Cooking With Miss Katie


  • Premade Pie crust (It’s a holiday, let’s make it easy!)
  • 1 cup turkey ham, small dice
  • 1 cup mild cheddar cheese, grated
  • 6 large eggs
  • 1 cup 2% milk
  • ¼ tsp each of salt, pepper and sugar


  1. Pre-bake pie crust according to directions. Then, pre-heat oven to 325 degrees F.
  2. In a medium-sized mixing bowl, beat eggs, ham, cheese, milk and seasonings until well-combined.
  3. Place pre-baked pie crust onto a cookie sheet (to prevent a mess in the oven). Pour the egg mixture into the crust and place onto the center rack of the oven.
  4. Bake for 60-75 minutes, or until a toothpick inserted into the middle of the quiche comes out clean. Let stand 10 minutes before serving. Enjoy!
